Countdown to Christmas Cookies Series –Week 2
 
As I continue with the Countdown to Christmas Cookies series this week I wanted to feature a cookie that has been a traditional cookie we serve every year, Rum Balls.  
 
This recipe is from my mother and every year she makes these delicious little chocolate balls that include rum.  The hint of rum combined with the cocoa makes these Rum Balls a treat that you just want to keep popping in your mouth.

These are simple to make, and requires no baking.  If you have never made rum balls,  I hope you give these a try as they are always a hit!
 
There are many ways to coat these little confections.  You can roll them in nuts, sprinkles, dip them in chocolate but for our family, year after year my mother simply rolls them in confectioners sugar, which is like a dusting of snow and serves them on a platter.  These make for the perfect holiday treat.

Rum Balls

  • Total Time: 20 minutes
  • Yield: 4 dozen

Ingredients

  • 11 ounce box of vanilla wafer cookies (broken in to finely chopped crumbs)
  • 1 cup finely chopped pecans
  • 1 cup confectioners sugar plus 1/2 cup for dusting
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup light or dark rum
  • 1/3 cup Karo light or dark corn syrup

Instructions

  1. In a large bowl stir together vanilla wafer crumbs, chopped pecans, 1 cup confectioners sugar and unsweetened cocoa powder.
  2. Stir in rum and corn syrup until blended.
  3. Shape in to 1 inch balls and roll in confectioners sugar.
  4. Store in a tightly covered container.

  1. I have heard nothing but raves about this classic cookie, yet it still does not seem to show itself for Christmas around our house. This year that may be changing. With so little ingredients and effort-no reason not to have these gems. Thanks for sharing-your picture has inspired.

  2. These would definitely last a few weeks since there is no eggs or dairy in them. The longer they sit the richer the rum taste gets. We make our well before Christmas and they last straight through to New Years. These also freeze well too. If you freeze them just don’t roll in the confectioners sugar until you are ready to put in containers to present as gifts or serve. Great idea to make and give as gifts!

  3. I LOVE these rum balls! I can only wonder how many of these I’ve eaten over the years! I thought about making them myself now that the recipe is available, but I think I’ll keep tradition alive and get them directly from Mother Thyme and Mother Thyme’s mother again soon! 🙂

Just think in a month and a half you’ll be able to get your hands on some of these! In the meantime you can drool over these pictures of them. 🙂

  5. Made these last night and they are delicious. I used Myers dark rum that went so well with the coco. I almost couldn’t wait to roll them into balls. This will definitely be one of my Christmas traditions every year when I make Christmas treats. Thank you for sharing.
