Roasted Balsamic Kale Chips

Have you ever had kale chips before?  If you have, you know how addicting they can be and if you haven’t I encourage you to try these because once you try one you will see why these are so wildly popular.

Kale is packed full of nutrients and these leafy greens have so many health benefits that getting your daily intake of some kale is so good for you.

Not only is kale so good for you but it taste amazing too.  I have a few kale inspired recipes I would like to share, first being these Kale Chips.   Fresh kale broken into bite size pieces is tossed with olive oil, balsamic and sea salt and roasted in the oven for about 8-10 minutes.  The leaves go in soft and come out crunchy.  Even before I put these in the oven I often find myself nibbling on the leaves that are lightly tossed in this simple dressing.  

I love balsamic.  I use it often from salads, to dips and even desserts so I thought adding a touch of balsamic would add another element of flavor to these already tasty leaves.

You can’t go wrong nibbling on kale chips that provide a healthy and nutritious snack that tastes delicious!

Roasted Balsamic Kale Chips

Ingredients

  • 7 cups kale leaves trimmed into 1 inch pieces (from about 1 medium bunch
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 375 degrees F. Line baking sheet(s) with parchment paper, set aside.
  2. In a large bowl toss kale leaves with olive oil, balsamic vinegar and salt until leaves are coated. Spread kale in a single layer on baking sheet(s) and roast in preheated oven for 8-12 minutes until crispy.
  3. Let cool and enjoy.

Notes

When prepping leaves, remove leaves from white stems and then trim without stem into pieces. You may also roast these at a lower temperature at 350 degrees F for 10-15 if preferred.

  1. Wow these sound wonderful . I just got an email yesterday about bagged kale chips but why buy them when you can make them easy enough. I can see using your version like croutons. Why not if they’re this nice and crispy? Who needs the bread croutons? Not me!
