Radish and Avocado Wraps


I love creating simple lunches to enjoy while the twins are napping.  They tend to nap for about an hour and a half which just flies by.  I try to fit so much into that small amount of time I ended up never completing everything I set out to accomplish as well as fit in some time for a small lunch and enjoy some uninterrupted PDA time.  I probably don’t get much done because I start enjoying my lunch and get wrapped up on Pinterest.  The laundry and the mopping of the floors can wait when there is pinning to do, right?

I started nibbling on this little wrap recently and it is mighty good. The crisp and spicy radish provide and excellent crunch combined with the creamy texture of the avocado.  I love this for lunch and with Spring wedding and baby showers upon us these would be so cute to serve at one of those, don’t you think?  

I like to serve this on a bed of fresh greens;  I prefer spinach with a drizzle of extra virgin olive oil and a pinch of salt and fresh cracked pepper.  

This makes for an simple and easy lunch, appetizer to enjoy.


Radish and Avocado Wraps

Makes 2 wraps

Ingredients
1 ripe avocado, peeled and core removed
1 tablespoon fresh lemon juice
pinch of salt and pepper
1/2 cup thinly sliced radishes
2 8″ flour tortillas (or preferred wraps)

Directions
In a small bowl combine avocado, lemon juice and a pinch of salt and pepper.   Stir until combined and leaving chunks of avocado in the mixture.
  
Spread half the mixture onto flour tortilla.  Add 1/4 cup of sliced radishes and wrap tortilla.  

Slice in half and serve on a bed of greens.
