Radish and Avocado Wraps
I love creating simple lunches to enjoy while the twins are napping. Â They tend to nap for about an hour and a half which just flies by. Â I try to fit so much into that small amount of time I ended up never completing everything I set out to accomplish as well as fit in some time for a small lunch and enjoy some uninterrupted PDA time. Â I probably don’t get much done because I start enjoying my lunch and get wrapped up on Pinterest. Â The laundry and the mopping of the floors can wait when there is pinning to do, right?
I started nibbling on this little wrap recently and it is mighty good. The crisp and spicy radish provide and excellent crunch combined with the creamy texture of the avocado. Â I love this for lunch and with Spring wedding and baby showers upon us these would be so cute to serve at one of those, don’t you think? Â
I like to serve this on a bed of fresh greens; Â I prefer spinach with a drizzle of extra virgin olive oil and a pinch of salt and fresh cracked pepper. Â
This makes for an simple and easy lunch, appetizer to enjoy.
Radish and Avocado Wraps
Makes 2 wraps
Ingredients
1 ripe avocado, peeled and core removed
1 tablespoon fresh lemon juice
pinch of salt and pepper
1/2 cup thinly sliced radishes
2 8″ flour tortillas (or preferred wraps)
Directions
In a small bowl combine avocado, lemon juice and a pinch of salt and pepper. Â Stir until combined and leaving chunks of avocado in the mixture.
 Â
Spread half the mixture onto flour tortilla. Â Add 1/4 cup of sliced radishes and wrap tortilla. Â
Slice in half and serve on a bed of greens. Â
Mmm, looks tasty and super simple! I actually had avocado in my pita this afternoon and it was delicious! I love the creamy texture and rich flavor.
Simple lunches are the best and so are avocados. This wrap sounds so good, I love radishes!
