Cake Batter Rice Krispie Treats


I loved Rice Krispie treats as a kid.  I remember they were always a staple at school and church bake sales.  They were just your basic rice krispie treat but they were so good and my little hands loved getting ahold of one.  


Nowadays I am discovering all the unique combinations of Rice Krispie treats, or maybe I have been just living under a rock all these years.  Each time another one pops up I instantly revert back to my childhood thinking boy if I could have made them years ago they would be a hit.  Good thing I have young kids so once they start school I am armed and ready to whip up these fun treats for the class.  

When I got my assignment for 365 Days of Baking for this month’s Secret Recipe Club I was thrilled.  I was like a little kid in a candy store searching through Lynne’s recipe index.  Do I want to make Blackberry Swirled Cheesecake Cupcakes or do I want to make Strawberry Lemonade Cupcakes?  The possibilities are endless.  So many good recipes.  If you are looking for some tasty treats you can find them here.  

Then I saw Cake Batter Rice Krispie Treats.

Cake mix, Rice Krispies all in one treat.  Could this be possible?  

I needed to make these.  

These are amazing.  They are truly cake batter Rice Krispie treats.  You get the taste of cake batter incorporated with the marshmallow and rice krispies in each bite.  These are fun, easy and perfect for so many occasions.  And with summer picnic season in full swing I have also seen Pillsbury has a Stars and Stripe Funfetti Cake Mix.  How fun would these be for 4th of July barbecues?  


This recipe calls for one and a half cups of cake mix.  There is about three cups in a box.  So what to do with the remaining mix?  Seal it up and save it for another batch of these or make cake batter truffles or a batch of cookies to use up the mix.  

I think I may be starting a new kick of Rice Krispie treats;  just saying.  Don’t be surprised if you see another Rice Krispie treat recipe pop up here in the near future.  I have a few ideas up my sleeve.

Cake Batter Rice Krispie Treats

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter
10oz bag mini marshmallows
1 1/2 cups Pillsbury or similar funfetti cake mix
1/2 teaspoon pure vanilla extract
6 cups Rice Krisipes
2 tablespoons rainbow sprinkles
1/3 cup white chocolate melting chips (optional)


Directions

Grease a 9″x13″ baking pan with butter or non stick cooking spray.  Set aside.

In a large saucepan melt butter and marshmallows over medium heat, stirring occasionally.  

Reduce heat to low and stir in cake mix and vanilla until just combined.

Stir in half of the Rice Krispies and 1 tablespoon sprinkles;  mix well.  

Add in remaining Rice Krispies and stir until combined.  

Pour mixture into prepared baking pan and spread evening.  

Microwave chocolate in 30 second intervals until melted.  Drizzle over rice krispies.  Sprinkle with remaining sprinkles.  

Let cool and cut into squares.

  3. These sound like perfect birthday party food! Rice krispies are really the only thing I remember making with my mom as a kid – she baked a lot, but I had no interest in it at the time, sadly. I loved stirring the sticky marshmallow though!

  4. Very cool! I have not ventured out beyond traditional, peanut butter and cocoa krispie treats. These look so fun. I know my Hubby and nieces and newphews would love these. Saving this one for next time the kiddos come to visit. Fun pick!

  7. That’s a LOT of butter…about 4 times the amount used in standard krispies treats. Any training behind this?

    1. Yes, I do agree that is a lot of butter compared to other rice krispie treat recipes. This was an adapted recipe that I tried from another food blog, and they really turned out delicious, even with that amount of butter. I have not tried it with less butter to know if it would turn out the same.

  8. I was on the hunt for something great to make for a bake sale the kids want to have at my son’s after school care program. They are donating their profits to St. Jude’s. The purchasers will primarily be parents buying for their kids, so I was looking for something kids would be into – and kids LOVE sprinkles. The sprinkles plus the pink drizzle sold me on this recipe.

    After cutting them and bagging them, one had to be sacrificed for the cook (me). They are A-Mazing! This truly takes the already fabulous Rice Krispie treat to a whole new level. The only thing I had to change was the pink candy melts. My store had the white blocks for making almond bark. I thought I would tint it with some food color. After adding it, I freaked a little because the first ingredient on the food color package is water, which I know can make the coating seize. I think enough of the water evaporated while microwaving that it came out okay. It wasn’t thin enough to drizzle, though, so I sort of Jackson Pollack’ed it. It did some in blue and some in pink so that the boys wouldn’t turn their noses up at them.

  9. This looks delicious! I have to eat gluten-free, so I can’t get a funfetti cake mix. Do you think I could get similar results from a vanilla cake mix and adding some sprinkles? Betty Crocker’s g-free vanilla cake is pretty good, but I’m not sure if vanilla and funfetti taste similar. Thanks!
