Creamy Avocado Yogurt Dressing


Our garden is bursting with vegetables.  

We have about 1,521 tomatoes that I am going to need to eat, can and cook with in about a week.  

Ok, maybe not that many but we have a ton!

The other thing thing that is growing quickly is our lettuce, so we are picking lettuce almost everyday for salads.

Sometimes I like a simple light dressing of just olive oil and balsamic.  Other times I go for a vinegar and lemon juice dressing.  And then there are times I enjoy a creamier dressing, and this Creamy Avocado Yogurt dressing has quickly become a favorite of mine.  

Even though its a creamy version, it is not heavy as I incorporate Greek yogurt instead of a thick mayonnaise, sour cream or buttermilk which some creamy style dressings are typically made with.  This has a nice blend between a variety of dressings I enjoy including olive oil and lemon juice.  

If you are skeptical of trying a dressing made with avocado I definitely encourage you to give this a try.  It is creamy yet light and perfect with a hearty lettuce salad or as a dip.  



Creamy Avocado Yogurt Dressing


Ingredients:
1 ripe avocado 
6 oz. plain Greek yogurt
1 lemon, juiced
1/2 teaspoon fresh dill, finely chopped
1/4 teaspoon fresh parsley, finely chopped
1 small garlic clove
1/3-1/2 cup extra virgin olive oil
Salt and pepper to taste

Directions:
In a food processor or blender combine avocado, yogurt, lemon juice, dill, parsley and garlic clove.  Pulse one or two times to incorporate.  While machine is running stream in extra virgin olive oil.  For a thicker dressing use only about 1/3 cup; for a thinner consistency use about 1/2 cup.  Blend until creamy.  Season with salt and pepper.  

Toss in a salad or use as a dip.  

Store covered in refrigerator.

  1. Yum – love avocados but have never made dressing with them! Sounds brilliant! So jealous of your garden! I like in an apartment in DC so no garden space whatsoever – I did try to grow some herbs on the balcony but because the area gets basically no sunlight it didn’t work out so well!

  4. I make this type of dressing all the time and enjoy throwing in some honey or stevia to balance out the lemon or lime. It also brightens up the avocado.

  5. My husband had to have his mayonnaise. After searching for a healthy substitute, you delicious reciped popped up. I have made this recipe several times and will never use mayo again! Thank you for sharing.

  6. I used an ice cube tray, and froze my dressing so I can take it out as needed. Just defrost in the microwave, or set in the fridge as required (cover with wax paper or wrap)…no need to worry about browning, it looks nice a green even after a week in the freezer!

    Skipped the oil entirely.
