I love granola, especially homemade.  

I rarely purchase store bought granola but on occasion I will purchase granola from a bakery.  When we recently made a stop through my favorite town Skaneateles while on our family vacation last month I stopped in my favorite bakery and purchased some of their granola.  It’s crunchy and filled with crisp rolled oats, dried cranberries and lots of nuts.  
 
I love eating granola whether to grab a handful to snack on, or over yogurt.  I was getting low on my granola supply when I was assigned Delicious Existence for this month’s Secret Recipe Club.  I came across the recipe for Better Than Bakery Granola and I thought that would be the perfect recipe to share.
 
I love this granola, I actually can’t stop eating it.  It smells so good slowing cooking in the oven too.  The smell of sweet maple softly fills the air in the kitchen. 

If you are a granola lover and typically purchase your granola at the market or elsewhere I definitely encourage you to make your own.  There are so many varieties and it is so easy to whip up.    Toss the ingredients in a large bowl, spread on a baking sheet and let the oven slowly crisp your rolled oats into crunchy granola.   The granola stores well for a few weeks in an airtight container.  Thinking ahead to the holidays, a batch of homemade granola is always a nice gift which I have done in the past.  

Serve on yogurt, munch on it as an afternoon snack or serve over cold milk and enjoy!

Maple-Nut Granola

Ingredients

  • 2 1/2 cups old-fashioned rolled oats
  • 1/2 cup sweetened coconut flakes
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped pecans
  • 1/4 cup sliced almonds
  • 1 tablespoon flax seed
  • 1/4 cup light brown sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup water
  • 2 tablespoons coconut oil
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. Spray a large rimmed baking sheet with cooking spray and set aside.
  2. In a large bowl combine rolled oats, coconut flakes, walnuts, pecans, almonds and flax seed. In a medium bowl combine brown sugar, maple syrup, water and coconut oil.
  3. Pour mixture over oat mixture and stir until combined. Spread mixture on prepared baking sheet.
  4. Bake for 30 minutes.
  5. Remove from oven and stir. Continue to bake until golden brown, about 20 minutes more.
  6. Stir in cranberries. Let cool completely.

  1. Wow! This sounds amazing – I love that there is coconut in there (its my absolute favorite!!). Awesome choice for SRC – I think you’ve talked me into trying to make my own granola! 😀
