No, you don’t win a million dollars or a cute little gadget for guessing the right answer but you do get a crazy delicious recipe for a tasty little salad that is perfect on bread or top on a bed of lettuce.

If you like chicken salad, like my Curry Chicken Salad you will love the spin on this which includes apples, cranberries and walnuts tossed in a maple and dijon yogurt dressing.  

If you are hesitant about using yogurt in place of mayonnaise, trust me it works.  The Greek yogurt gives a little tang that is a perfect compliment to this salad and still has a creamy consistency.

The best part you slash the fat found in mayonnaise for a healthier alternative so you can save the calories for a cookie.

Maple-Dijon Chicken Salad

Ingredients

  • 6 oz. plain Greek yogurt
  • 2 tablespoons maple syrup
  • 2 tablespoons dijon mustard
  • 12 oz. cooked chicken cut into bite size cubes
  • 1/3 cup apple, chopped
  • 2 tablespoons dried cranberries
  • 2 tablespoons chopped walnuts or pecans
  • Salt and pepper to tastes

Instructions

  1. In a large bowl stir together yogurt, maple syrup and dijon mustard until creamy. Add in chicken, apple, cranberries and walnuts and stir until combined. Season with salt and pepper.
  2. Serve on bread, croissants or on a bed of lettuce.

Notes

Use leftover chicken or rotisserie chicken. If cooking chicken simply add chicken breasts on a foil lined baking sheet. Drizzle with olive oil and season with salt and pepper. Cook in a preheated 350 degree Fahrenheit oven for 35-40 minutes until chicken is cooked thoroughly. Cool completely and cut into pieces

  2. I love using Greek yogurt in chicken salad! Nobody ever believes me when I tell them that there isn’t any mayonnaise in it. Your version with maple syrup looks delicious; I just might have to try it sometime!
