Peanut Butter Pumpkin Granola

Granola is an all around perfect, healthy snack.  It’s crunchy and sweet and is great mixed with fruit and yogurt, tossed in a baggy and have in your purse or desk at the office if you need a snack or just simply with a splash of milk.  

If you ever pass a bag of granola at the grocery store you may be shocked at how expensive it is and if you go for the gourmet granola it’s even more.

Making your own granola is not only easy but so much cheaper.  You can make a batch of fresh, homemade granola that will last you all week long, maybe more.  Granola also makes a lovely hostess gift or for the holidays placed in a mason jar and topped with a ribbon.  

No matter if you are making it for yourself or to give as a gift, it is sure to be enjoyed.

Peanut Butter Pumpkin Granola

Ingredients

  • 3 cups old fashioned rolled oats
  • 1/2 cup chopped walnuts or pecans
  • 1 tablespoon flax seed
  • 1/4 cup Smart Balance Rich Roast Creamy Peanut Butter
  • 1/4 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/4 cup light brown sugar
  • 2 tablespoons Smart Balance Cooking Oil
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1/2 cup dried cranberries
  • 1/4 cup white chocolate chips

Instructions

  1. Preheat oven to 300 degrees Fahrenheit. Lightly oil a large baking sheet with Smart Balance Omega Non-Stick Cooking Spray and set aside.
  2. In a large bowl combine rolled oats, walnuts or pecans and flax seed.
  3. In a medium bowl add peanut butter, pumpkin puree, brown sugar, oil, pumpkin pie spice, vanilla extract, cinnamon and salt. Stir until blended. Pour mixture over rolled oats and gently stir until well combined.
  4. Spread mixture on prepared baking pan and bake on center rack in a preheated oven for 25 minutes. Gently stir mixture and continue to bake for an additional 15-20 minutes.
  5. Remove from oven and allow to cool for about 5 minutes. Stir in cranberries and white chocolate chips.
  6. Store in an airtight container.

    1. Thanks Cassie! I have been doing granola as hostess gifts for the last few years and everyone loves it. I get cute jars from Specialty Bottle and tie it with a pretty ribbon and it makes the perfect gift. Glad you like the idea. 🙂
