There’s only one more week of school left and my kiddos graduate kindergarten! Just thinking of that makes my heart sink. My babies are growing up. It seems like yesterday they were headed off to their first day of school. Now we are days away from summer vaca!

I’m looking forward to having my kids home. I have a lot of fun summer activities planned like camping, berry picking, lazy days swimming in the pool and a family vacation later in the summer to Ocean City.

Lemon Poppy Seed Overnight Oats

Ingredients

  • 1/2 cup Quaker Old Fashioned Rolled Oats
  • 1/2 cup milk or preferred milk alternative
  • 1/2 tablespoon lemon zest
  • 1/2 tablespoon pure maple syrup
  • 1/4 teaspoon poppy seeds
  • 2 tablespoons lemon curd
  • 1/4 cup vanilla yogurt

Instructions

  1. Pour oats in a mason jar.
  2. In a small bowl mix milk, maple syrup, lemon zest and poppy seeds.
  3. Pour on top of oats.
  4. Cover and refrigerate overnight.
  5. Before serving dollop with lemon curd and top with yogurt.
