Today is my kids last full day of kindergarten. Holy smokes! Where did this school year go? They have a couple half days next week which also includes their kindergarten graduation. I’m going to be a mess. Just thinking about it make me sad. When they start singing their little graduation songs I have to cover my ears or I’ll start balling. Of course they think it’s hilarious and probably sing it just to make mommy cry.

Right now I’m anxious for summer vaca to begin. I’m sure halfway through summer I’ll be going nuts a little but for now I’m embracing my kiddos being home and not having to worry about packing lunches every night. Who else is excited about that?

Instead I will become the make to order chef for breakfast, lunch, dinner and snacks ten times a day. Of course neither of my kids can agree on the same thing. One always want one thing and the other always wants another until they see what the other one is eating then they end up wanting the same thing. Sometimes by the time I’m done preparing one meal everyone is eating something different. I try to make things my kids will like or at least try but they’re 6 and they’re picking and I’m not going to fight it or force them to eat something they don’t want. It’s a battle I’m not going to win and I’m outnumbered with twins. I’ve got a system and it works for me so we can eat together as a family every night which is the most important thing. Thankfully they do have decent eating habits and do eat a lot of fruit, veggies, dairy and protein which compensates for their lack of variety or willingness to try different things. They just like things basic. Plain chicken or they love rotisserie chicken. They also love steak which Mr. Mother Thyme makes and it’s the best steak I’ve ever had, seriously. They could eat fruit and broccoli like it’s candy too so I don’t get too frazzled when they turn their nose up at something because I know it’s a phase like most kids go through.

One thing we can all agree on at least or at least makes my life A LOT easier is one-pot meals. Thank goodness for those! This One-Pot Chicken Fajita Pasta is delish! Like lick the plate delish. The sauce, oh my gosh the sauce is scrumptious! And everything and I mean everything is all in one pot. #happydance #happymommy

It’s actually funny how I came up with this recipe. I was prepared to make my Sweet and Sour Chicken and while the chicken was cooking I thought what the heck let’s give this idea a shot. And sure enough it was a hit! It’s everything you love about chicken fajitas all blended in one-pot pasta dish.

With the craziness of summer vacation upon us being armed with easy, go-to one pot meals that can be whipped up in 30 minutes will make meal time simple and definitely tasty!

One-Pot Chicken Fajita Pasta

Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • Pinch of black pepper
  • 1 1/2 pounds boneless (skinless chicken breast, cubed)
  • 2 bell peppers (sliced)
  • 1 sweet onion (sliced)
  • 2 cloves garlic (minced)
  • 8 ounces uncooked ziti or penne pasta
  • 1 can (10 ounce diced fire roasted tomatoes and green chilies (like Ro-Tel))
  • 2 cups chicken broth
  • 3/4 cup heavy whipping cream
  • 2 teaspoons chili powder*
  • 2 teaspoons ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • Cilantro (green onion and or chopped avocado for serving, optional)

Instructions

  1. Heat oil in a large deep skillet over medium-high heat.
  2. Season chicken with salt and pepper and add to skillet.
  3. Cook chicken, stirring occasionally until cooked through.
  4. Add peppers, onion and garlic and cook until slightly tender, about 7 minutes.
  5. Stir in pasta, tomatoes, chicken broth, cream, chili powder, cumin, garlic powder and oregano.
  6. Bring mixture to a boil then cover and reduce to a simmer for about 15 minutes until pasta is tender.
  7. Remove from heat and stir.
  8. Season with salt and pepper to taste.
  9. Garnish with cilantro, green onion and/or chopped avocado

Notes

2 teaspoons of chili powder definitely give this a nice little kick and heat. If you are sensitive to that you may want to reduce the chili powder to 1 1/2 teaspoons and add more to the sauce once you stir it in if needed.
