Banana Cupcakes with Strawberry Frosting

Yesterday was the twins first birthday!  I can’t believe how a year flew by.  It seems just like yesterday I was pregnant and anticipating their arrival.  Now we are celebrating their first birthday, crazy!
For their actual birthday my husband and I had a low key day with them.  Today is their birthday party with family and friends.  
I have to admit I did not bake their birthday cake for the party, shame on me.  I ordered the cake including their own smash cakes for them to dive in to.  I can’t wait to see how that unfolds.  
I wanted to make them a special treat for them to have on their birthday.  Their favorite fruits are bananas and strawberries; well at least I think they are since they never came right out and told me.  I wanted to incorporate bananas and strawberries in to their birthday dessert, so I created Banana Cupcakes with Strawberry Frosting.  The banana cupcakes are in between the consistency of a muffin and cake; definitely not as fluffy as a light cupcake.  The frosting is light and whipped.  It actually took me two attempts to create this frosting.  The first round was a flop when I added in pureed strawberries.  I know in some recipes call it calls for gelatin, but I didn’t want to go that route, so I added in strawberry preserves and it seems to give me the consistency and taste I was wanting to achieve.  
They loved the cupcakes.  It was hilarious watching their little mouths dive in to these cakes.  My husband must have loved them too because he ate 4 of them!

Banana Cupcakes with Strawberry Frosting
Makes 12 
For cupcakes
1/2 cup unsalted butter, softened
3/4 cup sugar
3 large eggs 
1 teaspoon vanilla extract
1 3/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup pureed or mashed banana
For frosting
1/2 cup unsalted butter, softened
2 cups confectioners sugar
1 teaspoon vanilla extract
1 tablespoon milk
1/3 cup strawberry preserves
Banana Cupcakes
Preheat oven to 350 degree.  In a large bowl using electric mixer or stand mixer, beat butter and sugar until light  and fluffy.  Add eggs, one at a time.  Add vanilla.
In another bowl shift together the flour, baking powder and salt.  
Add flour mixture and banana alternating between the two to mixer.  
Line each muffin cup with a paper liner.  Fill each muffin cups with about 2/3 batter and bake for 17-20 minutes until a tester inserted into a cupcake comes out clean.
Remove from oven and let cool on wire rack.  
Let cupcakes cool completely before frosting.
Strawberry Frosting
Using an electric mixer or stand mixer cream butter until light and fluffy.  Add confectioners sugar 1/2 cup at a time beating well after each addition.  Add vanilla and milk and beat until frosting is well combined.  Add in strawberry preserve 1 tablespoon at a time until frosting in creamy.
Frost cooled cupcakes and store in refrigerator.

    I just made these. I love them! Thank you for the recipe. Do you have any recipes for maybe a lemon cupcake? I wanted to try a frosting with the lemon preserves I found while buying the strawberry!
