Watermelon Salsa



Slice open a watermelon, grab a bag of tortillas (and maybe a margarita) and dive in to this watermelon salsa.  It is the perfect summer snack to whip up and enjoy while lounging by the pool or heading to the park.  It is refreshing and light and so easy to make.  


I won’t digress again about what I craved when I was pregnant (OK, I will) but when I first found out I was pregnant during my first trimester I craved watermelon.  Of course my cravings for watermelon came in the month of December when finding watermelon was like finding pumpkins in the summer.  Fortunately my sweet husband would find me watermelon so I could lounge in bed with my bowl full of watermelon.  Thankfully I wasn’t craving bon bons.

Watermelon is just one of those fruits that when there is a bowl of it sitting in front of me I just eat the entire bowl.  Turn that bowl in to a watermelon salsa and its even better.  For me I eat this just with a spoon and if I can a margarita!

Watermelon Salsa

Ingredients
6 cups seedless watermelon, diced
1/3 cup red onion, diced
1/3 cup fresh cilantro, diced
1 teaspoon lime juice
Pinch of salt

Directions
Combine watermelon, onion, cilantro, lime juice and salt in a bowl.  Stir well and serve chilled.
