Is it Monday already? This weekend certainly went by fast. I hope you had a wonderful weekend and enjoyed some good food!
We had a weekend filled with little projects we wanted to get to and not everything got done. We always have the intentions to get things done and before you know it, it is eight o’clock on a Sunday evening and we are putting the twins to bed. We scratch our heads thinking where did the time go and wonder why half the projects didn’t get done.
One of my big projects for this week is gathering up all of the twins baby clothes, toys and gear that we don’t use anymore and get them ready for a consignment sale going on this weekend. If you have ever participated in one of those sales you know the work involved in getting the items together, cleaning and tagging them. It is a great way to make a little extra money on items that are collecting dust, but also a great place to pick up some items for your little ones. You don’t know how much you have that isn’t used until you start putting it all aside. One of our rooms in our home has temporarily been taken over with piles full of baby toys and with twins its double of everything.
This week I have a fabulous menu lined up of recipes coming your way. We are going to kick off today with a must try dinner entree, Steak Fettuccine with Roasted Red Pepper Alfredo Sauce. If you prefer, you can omit the steak and just make this a simple pasta dish without meat, or substitute the steak for chicken but honestly I would do it with steak or no meat at all. The Roasted Red Pepper Alfredo Sauce and steak really work well together.
This is the perfect dinner entree to create when you have other projects that need to get done. The sauce takes very little time to make but the outcome is purely delicious. You can make dinner and get some projects or chores done without much effort.

Steak Fettuccine with Roasted Red Pepper Alfredo Sauce
1 ½ cup shredded fresh Parmesan cheese plus additional for serving
1 garlic clove, minced
In a small bowl combine Worcestershire, garlic powder, onion powder, salt and pepper and stir until blended. Pour over both sides of steaks and let marinate for at least 30 minutes.
Cook steaks using desired cooking method until done. Thinly slice on an angle.
For Roasted Red Pepper Alfredo Sauce
Preheat oven to 425 degrees. On a baking sheet toss red pepper wedges with a light drizzle of olive oil and a pinch of salt and pepper and spread in a single layer. Roast for 18-20 minutes until peppers are tender and slightly charred. Remove from oven and in a food processor or blender add roasted red peppers and blend until pureed. Set aside.
In a medium saucepan melt butter over medium heat. Turn to low heat and add heavy cream, cheese, garlic and red pepper puree. Cook, stirring occasionally until cheese is melted.
Toss sauce with fettuccine reserving a small amount for drizzling.
Top fettuccine with sliced steak and sprinkle with freshly grated Parmesan cheese.
