Ah, the weekend is almost upon us!  It seems like the days and weeks go by so fast and the twins are growing right before our eyes. Eden is walking, even though she is a bit unsteady she just loves to walk as much as she can.  When we had her at the Fair earlier this week and we took her out of the stroller she did not want to be held.  She is a one year old on a mission to walk and pick up every leaf, stick and stone.  
 
Tyler is just starting to walk.  My little guy is getting so big.  He gets so excited when he takes a few steps. Sometimes I think he doesn’t even realize he walked until he sits down.  You can tell he is thinking to himself “wow did I just do that?”
 
Another week has come and gone and we are looking forward to a low key weekend.  Being back in New York near our family we entertain often.  We certainly enjoy doing it but we look forward to the weekends when we don’t have much planned.

We love our Sundays where we hope the twins sleep in (I’ll take a 7am wake up call as sleeping in) and we start our mornings with a nice family breakfast (and a few large cups of coffee for me).  
 
We like to rotate what we have for Sunday breakfast but one of my favorites is waffles.  I love having a waffle maker which I got several years ago and use more often than I thought I would.  What is also nice about having a waffle maker is I double my batch of waffle batter and make extra to freeze.  During the week the twins love to have waffles for breakfast so having these handy in the freezer makes whipping up weekday breakfasts a snap.  Toss the waffles in the toaster and they are just as delicious as when they first came off the waffle maker.  
 
After these light and airy waffles are made, top with pure New York maple syrup, fruit, confectioners’ sugar and cinnamon or save and top with ice cream and syrup for a tasty dessert!

Sunday Waffles

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 5 waffles

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups whole milk
  • 1/2 cup (1 stick) butter, melted
  • 1 teaspoons vanilla extract
  • 2 large eggs, beaten

Instructions

  1. In a large batter bowl mix flour, sugar, baking powder, baking soda and salt.
  2. Make a well in the flour mixture and add in milk, butter, vanilla and eggs. Stir all ingredients together until smooth.
  3. Follow instructions of waffle maker to cook waffles.

Notes

Freeze waffles and toast desired amount of waffles from frozen in toaster.
Top waffles with fresh fruit, whip cream, maple syrup, confectioners’ sugar or cinnamon.
Serve as a dessert topped with ice cream and carmel or hot fudge.

  3. I just made these & they were not very crispy at all. Very floppy, great flavor but not what I was expecting. Not sure what it needs to make it better but, I don’t think I will be making them again.
