Buffalo Chicken Quesadilla


No, No,  you didn’t miss the memo that its Buffalo Chicken theme week, its not.  I really hate posting two similar recipes in a row but as I was deciding what to whip up for Mr. Mother Thyme and I today I decided to make Buffalo Chicken Quesadilla.  The intent was merely to make for us to enjoy for lunch but it was to good not to share.  I don’t mean to bore you with two Buffalo chicken recipes in a row but when something is good, its good!  

My next post will be Buffalo Chicken pie (joking)!  

This is now my third Buffalo Chicken recipe (in two weeks)!  I promise NO MORE (for a little bit at least).

Buffalo Chicken Quesadilla


Ingredients
1 12.5oz can of chunk white chicken, drained
½ cup Ranch dressing
½ cup hot sauce
3 cups mozzarella cheese
6 soft flour tortillas


Directions
In a medium bowl combine chicken, dressing and hot sauce.  


Spray large skillet with non-stick cooking spray.  Lay one tortilla on skillet and a top with one third of the chicken mixture.  Top with 1 cup cheese followed and flour tortilla.


Cook on medium heat until bottom is slightly brown and flip to cook remaining side.


Remove from skillet and let sit to cool.  Cut in to triangles and serve.



Notes:
For a lighter version, use light Ranch dressing.
