I love the mornings.  Waking up to a fresh start full of possibilities and a big pot of coffee.  

Making my kids a delicious breakfast each morning is important to me.  It is a great way to start their day as well.   Recently when I received a case of the new Chobani Champions Greek yogurt I thought the Vanilla Chocolate Chunk flavor would be delicious in waffles.  These have quickly become a new favorite with the kids and I have made these several times.

These tasty waffles are light and fluffy.  I love the Vanilla Chocolate Chunk Greek Yogurt in these.  The creamy vanilla greek yogurt with swirled with bits of chocolate chunks adds another delicious element to these already delicious waffles.  Top with fresh bananas slices and a splash of pure maple syrup and a fabulous breakfast is ready to serve.

Whole Wheat Banana Oatmeal Greek Yogurt Waffles

Makes 5 waffles

Ingredients
1 1/2 cups white whole wheat flour
1/3 cup old fashioned rolled oats
2 tablespoons sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/8 teaspoon ground cinnamon
1 cup milk
7 oz. (2 3.5oz cups) Chobani Champions Vanilla Chocolate Chunk Greek Yogurt
2 large eggs, lightly beaten
1 medium ripe banana, mashed
3 tablespoons butter, melted

In a large bowl stir together flour, rolled oats, sugar, baking powder, salt and cinnamon.  Make a well in the center of dry ingredients and add in milk, yogurt, eggs, banana and butter.  Mix ingredients together until blended.

Use quantity of batter per waffle maker instructions and cook until desired.

Top with banana slices.

  4. These waffles are amazing and so easy and fast to make! I have been craving waffles and wanted to find a healthy version that I could freeze for a quick breakfast. I just made them today with a few changes…
    **I used only 1 cup white WW flour, 1/2 cup oat flour (ground GF old fashioned oats), and 1/3 cup of the oats, 2 T honey for the sugar, a little extra cinnamon, 1 cup of unsweetened coconut milk for the milk, 7 oz plain organic non-fat Greek yogurt, 3 T coconut oil instead of butter, and I added 1/2 t vanilla extract. It made 5 large waffles. I topped mine with creamy organic peanut butter, sliced banana and a drizzle of maple syrup. Absolutely delicious! And secretly healthy! This will definitely be my go-to waffle recipe.
