Whole Wheat Blueberry Oatmeal Applesauce Cookies


I think these could quite possibly be my new favorite cookie.

Would you believe by looking at these that they are made from ingredients like whole wheat flour, rolled oats, fresh blueberries, unsweetened applesauce and some standard baking ingredients.  Aside from the sugar this recipe does not include anything like butter, oil or shortening to create these soft and chewy cookies.  

I wanted to create a fairly healthy cookie for me kids to enjoy as a treat.  I think this one comes pretty close to it.

If you were to ask someone if you could taste the applesauce in these cookies I bet they couldn’t.  The key is to use unsweetened applesauce which creates the texture but doesn’t add that extra sweetness as in sweetened applesauce.   The end result is a soft, cake like cookie that have texture from the rolled oats and bursting with fresh blueberries.  A treat perfect with a glass of milk.

Whole Wheat Blueberry Oatmeal Applesauce Cookies

Makes:  3 dozen

Ingredients
1 1/2 cups white whole wheat flour
1 cup old fashioned rolled oats
1 teaspoon baking powder
1 teaspoon salt
1 cup unsweetened applesauce
3/4 cup white sugar
3/4 cup light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1 cup fresh blueberries

Directions
Preheat oven to 350 degrees F.  Line baking sheets with parchment paper or Silpat.

In a medium bowl combine flour, rolled oats, baking powder and salt and set aside.

Using an electric mixer stir together applesauce, white sugar, brown sugar until combined.  Stir in egg followed by vanilla extract.  Gradually mix in dry ingredients just until combined.  Fold in blueberries.

Drop tablespoons size portions onto prepared baking sheets.  Bake for 10-12 minutes.  Cool slightly on baking sheet and then transfer to wire rack to cool completely.

  1. I definitely love blueberries! And I have spent most of my evening in the kitchen whipping up some pre-made oatmeal cakes for quick breakfasts. I am so trying these. I think I will try them a couple different ways to see if I can sub something for the sugar. They look amazing!

  2. Well I am moving in a month and need to use up some of my pantry ingredients so I might need to make something like this, but I’ll sub dried cranberries since I have those to use up! The kids will be happy! Thanks!
