Mini Caprese Frittatas

Makes 24 mini frittatas
Ingredients
6 large eggs
1/2 cup milk
1/4 teaspoon salt
Pinch of pepper
1/3 cup diced tomatoes
1/4 cup shredded mozzarella cheese
2 tablespoons fresh basil, chopped
3oz fresh mozzarella cut into 24 pieces
Directions
Preheat oven to 375 degrees Fahrenheit. Spray a 24 cup mini muffin pan with non-stick cooking spray and set aside.
In a large bowl whisk together eggs, milk, salt and pepper. Stir in diced tomatoes, shredded mozzarella and basil.
Place a cube of fresh mozzarella in each muffin pan and pour egg mixture in filling to the top.
Bake for 10-12 minutes until eggs are set and puffed.
Carefully remove from muffin cups and serve warm.










Wow that mini muffin pan is twice the size of the one I have now! I’ve been wanting to make bake doughnut holes using a mini muffin pan.
