Weekly Wrap: Week 3

I can’t believe we are now into October.  It really doesn’t feel like fall, much less October around here.  It has been unseasonably warm.  Once I start wearing my riding boots everyday, then to me, it’s fall.  I better watch what I say.  By next week it could be snowing.  Ouch, did I just say that?  Before I know it, I’ll be freezing and complaining about be cold.  In the meantime, I’ll just enjoy the weather we have.

It’s been a busy week and unfortunately I have been a little under the weather but I still seemed to manage to get a lot done.  In case you missed it, I featured two new recipes this week.  I kicked off the week with creamy No-Bake Pumpkin Cheesecake and Thursday began Bell Pepper Week and featured Slow Cooker Chicken Fajitas you’ll want to add to your dinner menu.

On The Menu

I love Pinterest. I get so inspired.  I really enjoy trying some of the recipes and ideas I pin.  I usually have one or two pinned recipes on my weekly menu.  This week I actually have three pinned recipes on the menu.  It’s a short week for us before we head to the lake for our last weekend there before the season ends.  Here is what is on our menu.

Monday ~ Pinned recipe. Cape Cod Chopped Salad from House Beautiful
Tuesday ~ Pinned recipe. Hawaiian BBQ Quesadilla from Half Baked Harvest
Wednesday ~ Pinned recipe. Hoisin Pork with Rice Noodles from Pinch of Yum
Thursday ~ Curry Chicken Salad  – keeping it light and taking the leftover salad for lunches over the weekend.
Friday ~  Heading to the lake for the last weekend of the season.  We love the fish fry at the resort for Friday night dinner.  
Saturday ~ We’ll grab dinner while we are out and about at the Ellicottville Fall Festival.

Bell Pepper Week continues on Monday with a delicious Breakfast Casserole and a Baked Rigatoni with Italian Sausage and Peppers. There are a few more giveaways coming up this week too!  I finish the week with cookies! Let me just give you a hint and say they are stuffed with caramel. I’m obsessed with these cookies and you will be too once you see them on Friday.
