My kitchen is never without a variety of fresh fruit. Even in the dead of winter, I love to enjoy a bowl of berries to satisfy my winter blues. My kiddos could eat fruit day and night. When I buy fresh berries my kids quickly grab them out of the refrigerator to snack on. They never last very long.

Now if I could only get them to do the same with veggies. They actually love salads and broccoli. That’s about it. I’lll take what I can get. I sneak in their daily dose of veggies when I can. Smoothies is a daily favorite in our home, so I am always adding kale, spinach and whatever veggies I have in hand in their smoothies. Sometimes a mom’s gotta do what a mom’s gotta do, right?

When it comes to fruit, I love to incorporate them into desserts. I feel like I am indulging on a sinful dessert when it’s loaded with fruit bursting with flavor. Grilled or sautéed fruit over yogurt, vanilla ice cream or with a drizzle of hot fudge is the perfect treat, however I could eat it alone. Tossing the fruit in a cinnamon glaze made simply with I Can’t Believe It’s Not Butter and a pinch of cinnamon before cooking them brings out the flavor even more. It’s pure heaven in ever bite.

I love to serve this Cinnamon Glazed Fruit with a dollop of fresh whipped cream that is made simply with heavy whipping cream and a pinch of sugar or sugar substitute. Whip it up until you get thick and creamy whipped cream you’ll want to lick right out of the bowl. I like to top it with a sprinkle of chopped walnuts or pecans for a little crunch. You can also skewer these for fun fruit kabobs too. However you decide to serve these, this Cinnamon Glazed Fruit will be a recipe you’ll enjoy making often.

Cinnamon Glazed Fruit

Ingredients

  • 32 1-in. pieces assorted fresh fruit, (such as bananas, pineapple, strawberries and peaches)
  • 2 tablespoons I Can’t Believe It’s Not Butter!® Spread (melted)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon orange zest
  • 1 tablespoon chopped fresh mint leaves

Instructions

  1. Add fruit to a medium bowl.
  2. Combine I Can’t Believe It’s Not Butter!® Spread and cinnamon in small bowl. Pour half the mixture over fruit and gently toss to coat.
  3. Add fruit to a grill pan and grill, turning occasionally, until fruit softens and grill marks begin to appear, about 5 minutes. Alternatively you can sauté fruit in a large skillet over medium heat.
  4. Stir orange zest into remaining cinnamon mixture. Pour over grilled fruit and sprinkle with chopped mint.
  5. Serve alone or add to serving cups and dollop with yogurt or whipped cream.

Notes

To add fruit to skewers, alternatively thread fruit on 12-inch skewers. If using wooden skewers soak in water for at least 30 minutes before using.
