Have you had enough of pumpkin and apple desserts yet? If you have then let’s switch gears to chocolate chip. Chocolate chip is probably my all time fave. I have a weakness for chocolate chip cookies. Who can resist soft and chewy chocolate chip cookies with a tall glass of cold milk?

These Chocolate Chip Cookie Rice Krispie Treats are the best! Chunks of store bought chocolate chip cookies are mixed with rice krispies and melted marshmallows then topped with chocolate chips and a sprinkle of more chopped cookies. Sounds good doesn’t it? But where these yummy treats really bring out the flavor of a chocolate chip cookie is with my secret ingredient – vanilla instant pudding mix and just a splash of vanilla extract. Mixing the pudding mix and vanilla extract in with the melted marshmallow really elevates the flavor. You just have to try to see for yourself.

Chocolate Chip Cookie Rice Krispie Treats

Everything you love about chocolate chips all mixed into one delicious rice krispie treat!

Ingredients

  • 6 tablespoons butter
  • 1 bag (10 ounces mini marshmallows)
  • 1 box (3.4 ounce vanilla instant pudding mix)
  • 1/4 teaspoon vanilla extract
  • 6 cups rice krispies
  • 15 packaged store bought cookies (like Chips Ahoy, chopped)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Spray a 8×12 baking pan with cooking spray and set aside
  2. Melt butter in a large saucepan over low heat.
  3. Reserve 1 1/2 cups marshmallows and stir remaining in marshmallows until melted then remove from heat.
  4. Stir in vanilla pudding mix until blended then add vanilla extract.
  5. Stir in rice krispies and 1 cup of the chopped cookies and mix until blended.
  6. Spray hands with cooking spray and spread mixture into prepared baking pan.
  7. Add chocolate chips and remaining chopped cookies and press down with hands until even.

Notes

For best results serve the same day or store in an airtight container for up to two days.
