I love the combination of the shrimp with the arugula and sausage, they really compliment each other well. If you don’t have arugula you can easily swap it out for spinach.

Easy Italian Sausage Bolognese with Shrimp and Arugula

Ingredients

  • 8 ounces ziti or any tube pasta
  • 1 pound mild Italian sausage (casings removed)
  • 1 jar (24 ounces Ragu Chunky Tomato, Garlic and Onion sauce)
  • 2 cups baby arugula (or spinach)
  • 1/2 pound cooked large shrimp
  • 1/3 cup freshly grated Parmesan cheese.

Instructions

  1. Cook pasta per package instructions. Drain and set aside.
  2. Cook Italian sausage in a large skillet over medium heat until cooked thoroughly.
  3. Stir in sauce bring to a low boil then reduce to a simmer.
  4. Add arugula and cook until wilted.
  5. Remove sauce from heat and add pasta and shrimp. Toss to coat with sauce.
  6. Top with cheese before serving.
