Summer vacation is in full swing and it has been non-stop! So far we’ve enjoyed some hot days lounging by the pool, strawberry picking and a trip to zoo. Our bucket list is full of fun things to do this summer and this mama want to be prepared with meals and grab and go snacks. Whether we are out and about or just hanging at home I like to have goodies the kids will like. These yummy little Chocolate Chip Oatmeal Bites are one of our favorites! They taste just like oatmeal chocolate chip cookie dough! Every time I make these I can’t help keeping a few scoops for myself!

These no-bake oatmeal Bites are so easy to make with just 5 ingredients! All you need to make these are Quaker® old-fashioned rolled oats, semi-sweet chocolate chips, peanut butter, honey and a little vanilla extract. Just mix everything up in a bowl, roll into bite size balls and chill for about 20 minutes! How simple is that?

My family and I are big oatmeal lovers! Not only do we love a delicious bowl of oatmeal every morning but I also love to use it in my treats for the kids (and adults) too! I’m all about making easy peasy meals this summer so I don’t miss spending time with my family. In the evenings when things are winding down I usually get my coffee set up for the morning (a must have!) and I’ll prep things for the next day. I love making overnight oats. I can easily pop them in little mason jars and they are ready to go in the morning. My kids love tossing in berries and a dollop of yogurt. They top theirs with some rainbow sprinkles for fun too. I’ve been loving my Lemon Poppy Seed Overnight Oats. It’s a must try! What I love about my overnight oats is we can customize it as a family to what everyone likes. The whole process takes minutes to prep and breakfast is ready to grab and go in the morning!

I like to make a batch of Chocolate Chip Oatmeal Bites in the evening for the next day too. They make the perfect mid-day snack or I’ll toss some in a container and take it with us if we’re heading out for the day. It’s been hot here so I’ll usually stick them in the cooler with our bottled waters and some other snacks too. When the munchies hit, I’m armed with snacks we can all enjoy!

Chocolate Chip Oatmeal Bites

  • Yield: 16 balls

Ingredients

  • 1 1/3 cup Quaker Old Fashioned Rolled Oats
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Mix all the ingredients together in a large bowl.
  2. Roll mixture into bite size balls, about 1-inch each. If needed spray hands with cooking spray to prevent sticking.
  3. Place balls on a parchment or wax paper lined baking sheet or platter and chill in the refrigerator for about 20-30 minutes.
  4. Store in an airtight container in the refrigerator.
