There’s nothing more satisfying then a big bowl of warm oatmeal to start the day! I absolutely love it! Of course I have some of my favorites like my Cinnamon Roll Oatmeal and I can’t go very long without whipping up some overnight oats like my Lemon Poppy Seed Overnight Oats topped with creamy yogurt and lemon curd. But this time of year for me it’s all about pumpkin spice and these Pumpkin Spice Breakfast Bowls are loaded with a ton of goodness to help start your day off right.

I never skip breakfast and now that my kiddos are back in school I’m all about quick and easy breakfasts. These Pumpkin Spice Breakfast Bowls are quick and easy to make thanks to Quaker Pumpkin Spice Instant Oatmeal. Let me tell you guys this oatmeal is seriously good on it’s own and some mornings when I am crunched for time having a box of this in my pantry is a total lifesaver! A quick zap of some water or milk in the microwave and a packet of Quaker Pumpkin Spice Instant Oatmeal and you’re ready to roll. Simple and delicious!

Even if I’m in a hurry whipping up these oatmeal breakfast bowls only take a minute or two longer. If you like smoothie or acai breakfast bowls, this is the oatmeal version. It’s simply pumpkin spice oatmeal topped with nuts, dried cranberries, chia seeds, pepitas. The best thing is you can get creative and add whatever you’d like.

Here are some of my favorite Pumpkin Spice Breakfast Bowl add-ins:

  • dried cranberries
  • dried apples
  • apple chips
  • diced apples
  • granola
  • walnuts
  • sliced banana
  • goji berries
  • pepitas
  • chia seeds
  • pecans
  • flax seed

I usually keep it to three or four things max. You don’t want to overload it. I also like to do a nice combination of dried cranberries, and chia seeds and something crunchy like granola. Then to top it off I’ll sprinkle it with some chia seeds or maybe flax seed.

Pumpkin Spice Breakfast Bowls

Ingredients

  • 1 packet of Quaker Pumpkin Spice Flavored Instant Oatmeal
  • 1/31/2 cup hot water or hot milk
  • 1/4 cup combination of nuts (dried cranberries, granola, diced apples, pepitas (see below for a list))

Instructions

  1. Prepare oatmeal per package instructions.
  2. Top oatmeal with a variety of of nuts, dried fruit and seeds.
  3. Serve warm and enjoy!

Notes

Use a combination of dried cranberries, dried apples, apple chips, diced apples, granola, walnuts, sliced banana, goji berries, pepitas, chia seeds, walnuts, pecans, flax seed
