Mandarin Orange and Spinach Pasta Salad

This easy recipe for Mandarin Orange and Spinach Pasta Salad is loaded with goodness and exploding with flavor! It’s tossed with an irresistible 3 ingredient dressing that you’ll want to drizzle on everything!

It’s only a few days into the new year and I’m already obsessed with something, this Mandarin Orange and Spinach Pasta Salad! Seriously it’s delish! I’ve made it dozens of times before but for some reason right now I can’t get enough of it! It’s super easy and totally customizable so it’s perfect for lunch of dinner. I love it as for meatless Monday but it’s great even with some chicken in it as well.

Kiddos even love it too! The sweet juicy mandarin oranges, the bowtie pasta and the tasty dressing makes makes this salad irresistible to any kid! And if you have picky kids that refuse to eat spinach you can substitute it with romaine lettuce or just chop up the spinach, tell them it’s lettuce and they’ll never (hopefully) know!

This Mandarin Orange and Spinach Pasta Salad is on my weekly meal plan this week and I never shared it on Mother Thyme so I figured it’s time to share this delicious recipe with you. It’s loaded with a ton of goodness including bowtie pasta, walnuts, dried cranberries, spinach and tossed in an easy 3 ingredient dressing that you’ll want to drizzle on everything! I also love to add in chopped cilantro, basil and green onions too. This salad is exploding with flavor! Once you try this amazing salad you’ll see why it’s so irresistible!

Mandarin Orange and Spinach Pasta Salad

Ingredients

  • 8 ounces farfalle pasta
  • 10 ounce bag baby spinach
  • 1/3 cup dried cranberries
  • 1/3 cup walnuts or sliced almonds
  • 1 can (4 ounces mandarin oranges, drained)
  • Dressing
  • 1/2 cup Sweet Baby Ray’s Sweet Teriyaki Sauce and Marinade
  • 1/3 cup rice wine vinegar
  • 1/2 cup vegetable oil

Instructions

  1. Cook pasta per package instructions. Drain and set aside.
  2. Meanwhile, add all the ingredients for the dressing in a mason jar with lid. Shake well until combined.
  3. In a large bowl toss pasta with spinach, dried cranberries, walnuts and oranges.
  4. Before serving drizzle desired amount of dressing over salad and toss to coat.

Notes

Additional add in’s
Chopped cilantro
Chopped basil
Chopped green onions
You can substitute a bag of leafy green romaine in place of baby spinach
You can substitute 2 peeled mandarin oranges in place of canned mandarin oranges.

  1. My family loves this salad (even my 4 kids, 5-12 yrs old). I do find it a little oil heavy so I reduce that. It’s one of the only things I will eat and prefer walnuts in.

  2. I have looked in 4 stores and can not find the Teriyaki sauce and the rice vinegar can you tell me what would a comparable substitute would be ?
