ALMOND MILK CHAI LATTE

I have a confession to make.

I stopped drinking caffeinated coffee.

Yep! I sure did. It’s been a few months since I stopped guzzling endless cups of caffeinated coffee and honestly I’m loving it.

I was an all day coffee drinker. Like six or seven cups a day. From the moment I woke up until after dinner I was sipping a cup of coffee.

I wondered for months why I was feeling so jittery and some days my mind felt like it was going a mile a minute. I felt my mind jumping from one thing to another. After self-diagnosing myself that caffeine was the culprit of my jitters I gave it up cold turkey. Now I enjoy a few cups of decaf a day and no more jitters! I’m so much more focused and I feel so much better.

I also started drinking a lot more tea. I’ve always loved tea but I find myself drinking it in place of coffee. I love enjoying a cup mid-day and I’ve always had a cup a night to wind down before bed. It’s so comforting and soothing.

Chai lattes have always been a favorite of mine. From the flavor to the aroma it was always one that I’ve enjoyed and one that I’ve frequently would order at my local coffee shop.

Let’s face it, a few trips a week to the coffee shop for a latte can certainly add up not to mention also having to bundle up to go out to get one on a snowy day. If I can create a coffee house latte in the comfort of my own home I’m all for that. And that’s exactly what I did and now I’m totally obsessed with it!

ALMOND MILK CHAI LATTE

This creamy and delicious Almond Milk Chai Latte is so good and you wouldn’t even know it’s dairy-free! Honestly! The blend of cinnamon, ginger, cloves and cardamom simmered in almond milk is incredible. Before serving I like to top it off with a little frothy almond milk too. Oh yes, you can certainly froth almond milk. I have a nifty little aerocinno milk frother that is amazing. If you ask me it’s a must-have for any coffee drinker (decaf coffee drinkers included!)

I use regular unsweetened almond milk as my creamer in coffee too. I’ve done that for a long time. A splash of almond milk and a couple drops of liquid stevia and my morning cup of decaf Joe is pretty tasty. And if I want to spice things up a little I add some frothed almond milk and a dash of cinnamon to my coffee for a yummy treat.

Almond milk is pretty much one of my favorite things. I use it for SO MANY things! I literally go thru several containers of almond milk a week. But it’s a good thing! I use almond milk in my daily smoothie which I drink every day and it’s also used as my coffee creamer. Not only do I love it for smoothies and coffee but I use it as a replacement for milk in many recipes.

  1. I have been trying to cut out dairy but cream is the hardest one because I don’t like the chalky taste of milk alternatives. With all the spices, the almond milk is really good. I wonder if you could make a big batch of the almond milk with spices/honey for the week and then reheat in the microwave.

  2. Can you make a batch ahead of time and warm later so I don’t have to make it every day?? How long would it keep?
