Celebrate any occasion with these festive Cake Batter Pancakes! These fluffy an delicious pancakes are made with cake mix and a few other simple pantry ingredients and are filled with your favorite cake batter flavor in every bite!

How fun are these Cake Batter Pancakes? Whether you are celebrating a birthday, holiday, or just because, these yummy Cake Batter Pancakes are the perfect breakfast treat!

Yesterday I shared my No Bake Cake Batter Cheesecake. Yummy, right? I mentioned that for that recipe you’ll have extra cake mix. What better way to use some more of the cake mix than in these Cake Batter Pancakes!

If you really want to make these today and don’t have confetti cake mix, no worries! You can use white or even yellow cake mix. I always have a box of white cake mix stashed in my pantry. Just use a box of white cake mix and then add sprinkles!

For my Cake Batter Pancakes I use confetti cake mix, then I dress it up with even more sprinkles. You can never have too many sprinkles. Any brand will do. Then I add a few other pantry ingredients to make these fluffy Cake Batter Pancakes. No need to run to the pancake shop for gourmet pancakes my friends! You can make them at home and they’re so good!

I make these for my kiddos birthday. Like I mentioned yesterday they are turning 9! So what better way to celebrate their 9th birthday than with a big stack of Cake Batter Pancakes drizzled with a sweet and creamy glaze!

Cake Batter Pancakes

Ingredients

  • 1 C confetti cake mix
  • 1 C all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1 C whole milk
  • 2 tablespoons butter (melted)
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1/4 C sprinkles (plus additional for topping)

Glaze

  • 2 C confectioners sugar
  • 34 tablespoons milk
  • 1 t vanilla extract

Instructions

  1. In a large mixing or batter bowl mix together cake mix (just the dry mix from the box) flour, baking powder and salt. 
  2. In a small bowl mix together milk, melted butter, eggs and vanilla extract. (I use the bowl I melted the butter in.) Alternatively you can make a well in the center of the dry flour ingredients and add the wet.
  3. Add wet ingredients to the dry and stir until blended.
  4. Heat griddle or large pancaking pan over medium heat. Spray with non stick cooking spray if needed. Make sure pan is hot before adding batter. Add about 1/4 C (or more depending how big you want the pancakes) of batter to pan. Sprinkle some sprinkles on each pancake if desired. Cook for a few minutes. Once pinholes begin to form on top or you carefully lift up the edge of pancakes and the edges are brown carefully flip and continue to cook the other side.
  5. Continue to cook until all the batter is used.

GLAZE

  1. In a medium bowl mix together confectioners sugar, milk and vanilla until combined and creamy. If mixture is too thick, add a little more milk until desired consistency. If mixture is too thin, add more confectioners sugar.
  2. Drizzle glaze over pancakes and add more sprinkles.
