Easy Homemade Caramels

About 7 minutes is all you need to make these delicious chewy homemade caramels!

Do you love soft and chewy caramels? If you do, then you’re going to love these easy homemade caramels that you make in the microwave! Just mix everything in a large bowl, microwave for 6 minutes, give it a stir and then microwave in 30 second increments until you have caramel.

The way you check to see if it’s done is take a spoon, dip it in the caramel, then dip it in a glass of cold water. Take the caramel on the spoon and and if it forms a ball with your hands you’re going to go. So easy!

You’ll pour that mixture in an 8×8 baking dish lined with parchment paper. I spray my pan first with cooking spray then add my parchment so it sticks. I then let it cool. I pop mine in the refrigerator for about 30 minutes. Then cut into pieces and enjoy!

You can use wax paper to wrap your caramel candies. So nice for little gifties!

Once you bite into one of these caramels, you’ll never want to eat the store bought caramels again!

Easy Homemade Caramels

Ingredients

  • 1/2 cup unsalted butter (melted and cooled)
  • 1/2 cup sweetened condensed milk
  • 1/2 cup light corn syrup
  • 1/2 cup white granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • pinch of salt
  • coarse sea salt to sprinkle on top (optional if you wanted to do salted caramel)

Instructions

  1. Spray an 8×8 baking dish with cooking spray then line with parchment paper. Set aside.
  2. Add first 7 ingredients to a large microwave safe bowl. Mix to combine.
  3. Microwave for 6 minutes.
  4. Carefully remove from microwave using hot pads and stir.
  5. Dip a spoon in caramel, then dip into a glass of ice water. Use fingers to make a ball with the caramel on spoon. If it doesn't hold, continue to microwave in 30 second increments.
  6. Using hot pads or gloves carefully pour caramel mixture in prepared baking dish. Sprinkle with sea salt if desired then let cool.
  7. Once cool, cut into square. Wrap in wax paper if desired.
  8. Store in an airtight container.

Notes

I usually go 6:30- 7 minutes.

To cool, I pop mine in the refrigerator for 30 minutes before I slice and wrap in wax paper.
