Low Carb Peanut Butter Cookies
An easy 4 ingredient, low carb recipe for peanut butter cookies!
- 1/2 C peanut butter preferably natural peanut butter, creamy or crunchy
- 1/2 C Swerve or similar sugar substitute
- 1 large egg
- 1/8 t vanilla extract
Preheat oven to 350 degrees.
In a bowl mix together peanut butter, sugar substitute, egg and vanilla until combined.
Divide mixture into 6 equal parts and roll into balls. Place on a parchment lined baking sheet.
Press down on each ball with a fork creating a criss cross pattern.
Bake for 10-14 minutes. Allow to cooking for 5 minutes.
If desired, before baking sprinkle each with coarse sea salt for a sweet and salty treat!
