Fluffy Buttermilk Pancakes

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1/2 cup whole or 2% milk
  • 1 large egg
  • 2 tablespoons butter melted


  1. Spray a large skillet or griddle with cooking spray and preheat over medium heat.
  2. In a large bowl mix together flour, sugar baking powder and salt.
  3. Make a well In the center and add in buttermilk, milk, egg and melted butter.
  4. Whisk ingredients together until blended.
  5. Once skillet is nice and hot pour 1/4 cup batter in skillet.
  6. Flip pancakes when pinhole size bubbles begin to form on top.

Recipe Notes

Enjoy these pancakes plain or once you pour batter into skillet add in your favorite mix-ins like chocolate chips or blueberries on top of batter before flipping.
Try not to press down on pancakes while they're cooking so they stay nice and fluffy!
