Pizza Spaghetti Squash Boats

Ingredients

  • 2 spaghetti squash about 2 1/2 pounds each
  • Olive oil cooking spray
  • Salt
  • Pepper
  • Garlic powder
  • 2 cups pizza sauce
  • 2 cups shredded mozzarella cheese
  • 24 slices of pepperoni
  • 1-2 tablespoons freshly chopped basil optional

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut squash in half lengthwise and remove seeds.
  3. Spray squash with cooking spray and season flesh with a little salt, pepper and garlic powder.
  4. Place seasoned squash flesh side down on a large parchment lined baking sheet.
  5. Bake for 40-45 minutes until tender.
  6. Remove from oven and set aside to cool.
  7. Once cool to touch scrape the inside of the squash with a fork to loosen and fluff the strands.
  8. Pour 1/3-1/2 cup of sauce over each squash and then mix the sauce with the strands.
  9. Top each squash with 1/3-1/2 cup shredded cheese and 6 pepperoni.
  10. Place on a baking sheet and bake for 8-10 minutes until the cheese is melted.
