Pickled Onions

  • 1/2 pound red onions 1 large or 2 small, thinly sliced
  • 1 1/2 cups apple cider vinegar
  • 2 tablespoons raw honey
  • 1/4 teaspoon salt
  • 1 teaspoon black peppercorns optional


  1. Place sliced onions in a medium bowl and set aside.
  2. Bring vinegar, honey and salt to a simmer in a small saucepan over medium-high heat until honey dissolves.
  3. Pour over onions, add peppercorns and cover loosely for about 30 minutes.
  4. Add onions without brine to a large mason jar then pour brine over onions until covered.
  5. Cover and refrigerate for 1-2 weeks
