Oatmeal Fig Jam Squares

  • 1 cup all-purpose flour
  • 1 cup Quaker® Old Fashioned Rolled Oats
  • 1/2 cup light brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup 1 stick butter, cubed and room temperature
  • 1/2 teaspoon almond extract
  • 3/4 cup fig jam


  1. Preheat oven to 350 degrees.
  2. Spray an 8x8 baking dish with cooking spray and set aside.
  3. In a large bowl mix together flour, oats, sugar, baking powder and salt.
  4. Mix in butter using a fork, pastry blender or hands until combined.
  5. Gently mix in almond extract.
  6. Reserve 1 1/2 cups of mixture and press the remaining mixture on the bottom of prepared baking dish.
  7. Spread fig jam on top.
  8. Sprinkle the remaining flour and oat mixture on top of fig jam.
  9. Bake on the center rack for 35 to 40 minutes until golden brown.
  10. Cool before cutting into squares.
