Roasted Tomato and Turkey Pesto Wraps
It’s back to school time. Â School begins next week here. Â Even though my kids are still a few years away from starting school I am already thinking how I will be the day I send them off to school.
I better stock up on tissues now.
Â
Our garden is overloaded with tomatoes and when I say overloaded I’m not kidding. Â I’m not complaining but I think I will reevaluate the amount of tomatoes I plant next year. Â I started all my tomato plants from seed in the winter so when I transplanted them to the garden I planted them all hoping for most of them to continue to grow. Â Sure enough they all did; hence the massive amount of tomatoes I have coming out of my garden on a daily basis.
Â
Whether you have tomatoes in your garden or not, these wraps are perfect for lunch or as an easy weeknight dinner with a salad. Â Roasting cherry tomatoes make them soft and juicy and are perfect in these wraps topped with pesto, fresh mozzarella and turkey.
