It’s back to school time.  School begins next week here.  Even though my kids are still a few years away from starting school I am already thinking how I will be the day I send them off to school.

I better stock up on tissues now.
 
Our garden is overloaded with tomatoes and when I say overloaded I’m not kidding.  I’m not complaining but I think I will reevaluate the amount of tomatoes I plant next year.  I started all my tomato plants from seed in the winter so when I transplanted them to the garden I planted them all hoping for most of them to continue to grow.  Sure enough they all did; hence the massive amount of tomatoes I have coming out of my garden on a daily basis.
 
Whether you have tomatoes in your garden or not, these wraps are perfect for lunch or as an easy weeknight dinner with a salad.  Roasting cherry tomatoes make them soft and juicy and are perfect in these wraps topped with pesto, fresh mozzarella and turkey.

Roasted Tomato and Turkey Pesto Wraps

  • Prep Time: 15 minutes
  • Cook Time: 15 minutes
  • Total Time: 30 minutes
  • Yield: 2 10-inch wraps

Ingredients

  • 1/2 pound cherry tomatoes
  • Drizzle olive oil
  • Pinch of salt and pepper
  • 2 10″ spinach, garlic and pesto tortilla wraps or similar
  • 2 tablespoons store bought or prepared Basil Pesto
  • 4 oz. fresh mozzarella cut into 6 slices
  • 1/4 pound good quality turkey breast

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Add tomatoes to a small bowl. Toss with a drizzle of olive oil and a pinch of salt and pepper. Place tomatoes on a small baking sheet and roast for 10-15 minutes until tender.
  3. Spread 1 tablespoon of pesto on wrap. Top with 3 slices of fresh mozzarella, 1/2 the turkey and top with 1/2 the roasted tomatoes.
  4. Roll up wrap bringing sides in to close and slice in half.
  5. Continue with remaining wrap.
  6. Serve with a side salad or fresh fruit.

  1. Can’t believe the kids are already back in school and summer is coming to a close. Your wraps look like delicious lunch items! Wish my mom had packed me some of those when I was in school! I’ll trade ya some tomatoes for zucchini 😉 My garden went wild with zucchini this year and my tomatoes still haven’t ripened! Lovely post!
