part-skim shredded mozzarella (optional)

Instructions
Warm olive oil in a large pot over medium heat. Add in sausage, onion, peppers and garlic and cook until sausage is cooked through.
Stir in the remaining ingredients and reduce heat to low. Simmer for about 30 minutes until heated through.
Serve warm alone or top with a sprinkle of mozzarella cheese and croutons.
