Easy Homemade Peanut Brittle

Ingredients

  • 1 cup sugar
  • 1 cup light corn syrup
  • 2 cups unsalted shelled dry roasted peanuts
  • 1 tablespoon baking soda

Instructions

  1. Line a large baking sheet with parchment paper lightly sprayed with cooking spray and set aside.
  2. Stir sugar and corn syrup in a large saucepan over medium heat until sugar dissolves.
  3. Stir in peanuts.
  4. Increase heat to high and bring to a boil, stirring frequently to avoid mixture to burn until candy thermometer reaches 295 degrees and mixture becomes a golden amber color , about 10-15 minutes.
  5. Remove from heat and stir in baking soda.
  6. Quickly pour mixture onto prepared baking sheet and spread evenly.
  7. Set aside to cool and harden.
  8. Break into pieces and store in an airtight container.
