This week has been full of smoothies. The week kicked off with 60 Smoothie Recipes, a list full of delicious smoothies that you definitely will want to keep on hand.
Wednesday I went green with a Banana Mango Green Smoothie made with coconut water. It is light and refreshing. Even people who don’t love green smoothies will love it.
This Banana Pineapple Coconut Smoothie is another one of my go to smoothies. It is sweet, creamy and tastes like a Piña Colada. The best part is this smoothie uses easy items like canned coconut milk and a can of pineapple chunks that you can always have on hand.
My kids are little monkeys and love bananas. My fruit bowl is always filled with them. Once in awhile they get a little brown. When they do, if I’m not ready to make Banana Bread, I’ll peel them and toss them in the freezer. Frozen bananas are great for smoothies. Any fruit that may not be ready for the garbage or compost, but too ripe to eat I always put in the freezer. I have a storage container that I just add fruit to anytime I have fruit on hand that has seen better days. I love to do that with veggies too which I use for making stock.

Banana Pineapple Coconut Smoothie
- Prep Time: 5 minutes
- Total Time: 5 minutes
Ingredients
- 1 ripe banana, peeled
- 1 cup canned pineapple chunks
- 1 cup canned coconut milk
- 1 cup ice cubes (about 8 large cubes)
- 1 teaspoon chia seeds (optional)
Instructions
- Place all ingredients in the blender and blend on high until creamy.
- Serve immediately.
