chopped Vidalia onion (about

8 ounces
cream cheese, softened
1 cup
shredded monterey jack cheese
1 cup
shredded mild cheddar cheese
1/2 cup
mayonnaise
1/3 cup
cooked crumbled bacon (about
6
slices)
1/3 cup
crushed crackers
Pinch of salt and freshly cracked black pepper
2 tablespoons
fresh parsley, cilantro or basil (optional)
Tortilla chips, crackers or a sliced baguette for serving

Instructions
Preheat oven to 350 degrees.
In a large bowl mix chopped onions, cream cheese, cheeses, mayonnaise and bacon.
Season with salt and pepper to taste.
Spread in a shallow baking dish (a 9-inch pie dish works great).
Sprinkle with crackers crumbs.
Bake for about 25 minutes until hot and bubbly.
Sprinkle with herbs and serve warm with chips, crackers or a sliced baguette.
