Vidalia Onion and Bacon Cheese Dip

Ingredients

  • 2 cups chopped Vidalia onion (about 1 large onion)
  • 8 ounces cream cheese, softened
  • 1 cup shredded monterey jack cheese
  • 1 cup shredded mild cheddar cheese
  • 1/2 cup mayonnaise
  • 1/3 cup cooked crumbled bacon (about 6 slices)
  • 1/3 cup crushed crackers
  • Pinch of salt and freshly cracked black pepper
  • 2 tablespoons fresh parsley, cilantro or basil (optional)
  • Tortilla chips, crackers or a sliced baguette for serving

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl mix chopped onions, cream cheese, cheeses, mayonnaise and bacon.
  3. Season with salt and pepper to taste.
  4. Spread in a shallow baking dish (a 9-inch pie dish works great).
  5. Sprinkle with crackers crumbs.
  6. Bake for about 25 minutes until hot and bubbly.
  7. Sprinkle with herbs and serve warm with chips, crackers or a sliced baguette.
