It’s has been awhile since I posted a new recipe. It’s good to be back. The holidays were crazy and it was nice taking some time off to spend time with my kids and unwind. It’s seems like a lot has happened since I last featured a recipe. We rang in a new year and I turned 40, eeks! I was dreading the big 4-0 for some time, but I have to say it wasn’t as bad as I thought it would be. Now I am ready to begin a new chapter in my life in my 40’s. It’s a refreshing new beginning and a fresh start.

As I begin the new year, I look forward to accomplishing new goals and tackling old ones. Getting organized, finding balance in my life with work and home and focusing on my family are my top priorities. Healthy living is also important to me however I never put that as a goal as it should just be a way of life generally. I also look forward to a new year sharing a variety of new recipes on MT.

The new year has started off as a cold one here in Western New York. With the frigid cold temperatures outside I love to create warm soups, hearty stews and slow cooker meals. One of my family favorite meals is my slow cooker pot roast. I must say this is probably the best slow cooker pot roast I have ever made. It hate using the word best in recipes, but this one truly is. Even someone like me that would prefer leaner cuts of meat like chicken would love this juicy and tender pot roast.

The aroma of this pot roast simmering in the slow cooker is intoxicating. It also creates a luscious gravy perfect for dunking thick slices of bread into. I love to serve it simply over mashed potatoes or my favorite, on top of slices of bread smothered in gravy. Pure comfort food!

When I am watching my carbs, I’ll just eat it alone with a side of veggies. Anyway you serve it, this is one delicious pot roast you’ll enjoy making again and again. Give it a try. Trust me, you’ll see why I call it the best slow cooker pot roast once you sink your teeth into this tasty meal.

The Best Slow Cooker Pot Roast

An easy pot roast simmered in a hearty gravy. Serve over potatoes or enjoy over slices of bread topped with gravy.

  • Yield: 4 -6 servings

Ingredients

  • 2 1/23 pounds chuck roast
  • 1/4 cup white distilled vinegar
  • 1 packet (.87 ounce brown gravy mix)
  • 10 1/2 ounce can reduced fat or regular cream of mushroom soup
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt
  • Pepper

Instructions

  1. Lightly season chuck roast with salt and pepper and place in the bottom of slow cooker.
  2. Whisk vinegar and brown gravy mix together and pour on top of meat. Turn to coat.
  3. In a small bowl mix soup, worcestershire sauce, thyme, garlic powder and onion powder until blended.
  4. Pour on top of meat.
  5. Cover and cook for on low for 8 hours.
  6. Remove meat from slow cooker and shred meat with two forks. Place meat back into slow cooker with gravy and stir.
  7. Serve over potatoes, with vegetables or on bread topped with gravy.
