It is loaded with ground beef, or you could easily substitute ground turkey or ground chicken, onions, crushed tomatoes and my secret ingredient that makes this the ultimate cheesy Cheeseburger Casserole, Velveeta.

I love making casseroles. They are perfect for any night of the week and you can easily whip them up ahead of time and pop them in the oven before serving. Not only are casseroles great for busy weeknights, but they are great for serving a crowd and simple enough to make for a potluck.

When I have made this Cheeseburger Casserole I never have any leftovers and it has gotten rave reviews from my toughest critic, Mr. Mother Thyme. I have made several variations of Cheeseburger Casserole in the past, but he says by far this is his favorite.

Cheesy Cheeseburger Casserole

Ingredients

  • 8 ounces extra wide egg noodles
  • 1 pound ground beef
  • 1/2 cup chopped white onion
  • 28 ounce can crushed tomatoes
  • 1 tablespoon yellow mustard
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 8 ounces Velveeta (cubed)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onion for serving (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook egg noodles per package instructions and set aside.
  3. Cook ground beef thoroughly in a large deep skillet over medium heat. Drain off fat.
  4. Add onion and cook for 3-4 minutes longer until just tender.
  5. Stir in crushed tomatoes, mustard, salt and pepper.
  6. Add Velveeta and cook, stirring occasionally until Velveeta is melted and creamy.
  7. Add in cooked egg noodles and stir to coat.
  8. Spread mixture evenly in a 9×13 casserole dish. Sprinkle with shredded cheese.
  9. Bake for 15-20 minutes until cheese is melted and bubbly.
  10. Remove from oven and garnish with green onion.

  1. This reminds me of a casserole that my mom made growing up – it was always great comfort food – this one looks like it might have more/better cheese though, which is never a bad thing!

  2. This was very good. I used Dijon mustard instead of yellow because that’s what I had and it turned out great
