Ingredients
- 2 pounds RubyFrost apples (peeled, cored and sliced)
- 1 tablespoon light brown sugar
- 1 teaspoon lemon zest
- 1/4 teaspoon cinnamon
- 1 17.5 ounce pouch sugar cookie mix
- 1/2 cup 1 stick butter, cut into small cubes
- 1 cup confectioners sugar
- 2–3 tablespoons milk
Instructions
- Preheat oven to 350 degrees. Generously spray a 7×11 inch baking dish with cooking spray and set aside.
- In a medium bowl toss apples with brown sugar, lemon zest and cinnamon.
- Spread apples evenly in the bottom of the baking dish.
- Sprinkle sugar cookie mix evenly on top of apples.
- Top with butter arranging it evenly over the entire baking dish.
- Bake on the center rack for 30-35 minutes until golden brown.
- Cool baking dish on a wire rack.
- In a small bowl whisk confectioners sugar with milk 1 tablespoon at a time until creamy. Drizzle on top of cobbler.

This was soooooo delicious!! 3 of us ate it up rather quickly! I couldn’t find that type of apple, so I used gala. I think I’d like to make a double batch for Thanksgiving! I must admit though, I added a little additional brown sugar and butter.
