One thing I love about summer is fresh peaches. There is nothing better than biting into a juicy, ripe peach. Sure it can be a little messy but it’s so worth it. At the farmer’s market I buy them by the bushel for salsas, jam and snacking. I also will slice them to freeze and use smoothies.

I was inspired to create this Oatmeal Cookie Peach Cobbler after my Sugar Cookie Apple Cobbler. Big chunks of oatmeal cookie topping with combined with the juicy peaches is delicious. It’s so good I couldn’t resist sharing it. Even Mr. Mother Thyme who is not a big peach lover said this is a keeper. I love it warm with a scoop of vanilla ice cream.

The best part is how easy it is. It only requires a few ingredients including a package of oatmeal cookie mix, some freshly sliced peaches and a stick of butter. No mixing, no fussing, just toss the ingredients in a pan and bake it for about thirty minutes. Super easy and incredibly tasty!

  1. Have made 2 of this recipe already. It’s very easy and very good!! My husband said it was the best dessert I have ever made! I normally make things from scratch but decided to try this and it was fantastic. I made another one for a close friend and I will give her the recipe. I used Betty Crocker, a 11.5 ounce pouch of oatmeal cookie mix. I’m going to try it with apple’s next.
