Is summer over yet? The calendar may say it’s finally fall but it certainly feels like summer still in my neck of the woods. As much as I’ll probably be complaining about how cold it is in a few months, right now I’m ready to say goodbye to summer and look forward to chilly fall weather. I’m ready to dust off my riding boots and wear cozy fall clothes. It’s time for my favorite time of year!

Aside from December, October is probably my favorite month. It’s filled with weekends going to the pumpkin patch, hayrides, and apple picking. The weekend isn’t complete without Sunday football and lots of yummy eats like this Hot Reuben Dip. It’s everything we love about a deli-style Reuben all in one incredible dip complete with slices of rye bread for dipping. YUM-O!

Not only is this dip the perfect party appetizer but if you are heading out to any Oktoberfest parties, this is one crowd-pleasing dip great for Oktoberfest that everyone will love!

I’m a total sucker for a good Reuben. When Mr. Mother Thyme and I first met I’ll never forget our first lunch date. He took me to this gourmet deli restaurant and told me they had the best Reuben sandwich so of course I had to try one. I think I inhaled an entire messy Reuben right in front of him. I knew then if he still liked me even after eating a messy sandwich he was a keeper!

So what makes this dip really good? It’s the perfect ratio of corned beef and sauerkraut all blended in a creamy dip with melted Swiss cheese. Served warm with chunks of rye bread this is one dip that you’ll want to make again and again.

Hot Reuben Dip

Get ready for Oktoberfest with this yummy Hot Reuben Dip. Deli-style corned beef, sauerkraut, swiss cheese, thousand island dressing, mayo and a little Parmesan cheese all blended together and baked until hot and bubbly. Ingredients

  • 1/2 pound thinly sliced deli-style corned beef (chopped)
  • 1 1/2 cups shredded Swiss cheese
  • 1 cup mayonnaise
  • 3/4 cup sauerkraut (well drained and roughly chopped)
  • 1/2 cup thousand island salad dressing
  • 2 tablespoons grated Parmesan cheese
  • Freshly cracked black pepper
  • Chunks of rye bread for serving

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl until combined then spread evenly in a medium baking dish.
  3. Bake for about 20-25 minutes until hot and bubbly.
  4. Serve warm with chunks of rye bread
