Apple Pie Granola Parfait

Start your day with an Apple Pie Granola Parfait – great for on the go or as an afternoon snack!

Ingredients

  • 3 cups peeled (cored and chopped apples, any variety (about 34 apples depending on size))
  • 1/2 cup apple cider
  • 1 Tablespoon light brown sugar
  • 1 teaspoon cinnamon
  • 2 cups yogurt
  • 2 cups granola

Instructions

  1. Mix apples, cider, sugar and cinnamon in a medium saucepan.
  2. Bring mixture to a boil over medium heat.
  3. Cover and reduce heat to low and cook until apples are tender, about 10 minutes.
  4. Let cool completely and refrigerate until chilled.
  5. To assemble parfait, add a 1/4 cup of yogurt to the bottom of a glass or mason jar. Top with 1/4 cup of granola and 1/4 cup apple compote. Repeat layer once.
  6. Refrigerate until ready to serve.
