Broccoli and cheese is a like a match made in heaven. One of my favorite broccoli and cheese recipes is Broccoli Cheese Soup. It’s thick, creamy and oh so filling. A bowl of warm soup is perfect on a chilly day complete with a fresh loaf of bread for dipping of course!  You can’t go wrong with a big pot of soup for dinner. This delicious Broccoli Cheese Soup along with a tossed salad is the perfect meatless meal that will have your family asking for seconds any night of the week.

I like to incorporate at least one meatless meal a week to my menu. It’s cost effective which makes my wallet and hubby happy. I will usually use veggies or ingredients I have on hand that I am using for other recipes for the week and incorporate the them into my meatless meal. For example, in this Broccoli Cheese Soup I am using a package of Horizon Mexican Shredded Cheese. I will usually purchase two so I have some extra for garnish and I will use the remaining cheese in another recipe like on Taco Tuesday for enchiladas, tacos, etc…

Frozen bags of veggies are always a staple item on my weekly shopping list. My kiddos love broccoli so I’m always stocking up on a few bags of frozen steam in the bag broccoli that I can easily pop in the microwave plus it’s a timesaver.

I also use frozen and steamed broccoli in my Broccoli Cheese Soup. Not only is it a inexpensive meatless meal ready in about 30 minutes but it’s a great pantry meal to have on hand too. It uses common ingredients like butter, flour, milk and canned chicken broth along with frozen broccoli, frozen carrots, diced onion and shredded cheese. Even if I don’t have this on my menu each week I always like to have a few meals which I call “pantry meals” on hand to whip up if plans change or if I have planned leftover night and there’s no leftovers.

So here’s my secret for the ultimate bowl of Broccoli Cheese Soup. Ok, I actually have three and yes they are probably not secrets BUT it’s what I do to make this soup delicious and better for you. First I use Horizon Mexican shredded cheese opposed to just plain shredded cheddar cheese as the combination of cheeses in the Mexican blend has more flavor. I also pour the soup in a blender and pulse it a few times to give it an even more creamier consistency. You could use an immersion blender but I prefer using the blender for this soup. I also reserve some of the veggies to add in the end and I use Horizon Organics 2% milk opposed to half and half which is commonly used Broccoli Cheese Soup but it’s so rich and creamy you would never know.

Broccoli Cheese Soup

  • Yield: 4 servings

Ingredients

  • 1 tablespoon Horizon Organic butter
  • 2 shallots (peeled and diced)
  • 1 clove garlic (minced)
  • 2 tablespoon all-purpose flour
  • 2 cups Horizon Organic 2% or Whole milk
  • 1 can (14.5 ounce low sodium chicken or vegetable broth)
  • 1 6 ounce package Horizon Organic Mexican shredded cheese
  • 1 12 ounce bag frozen steam in the bag broccoli cuts or florets, steamed per package instructions
  • 1 12 ounce bag frozen steam in the bag crinkle cut carrots, steamed per package instructions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Melt butter in a medium saucepan over medium heat.
  2. Add shallots and cook until soft, about 5 minutes.
  3. Stir in flour until dissolved.
  4. Warm milk in a microwave safe cup bowl for about 30-45 seconds until just warm.
  5. Gradually stir in milk about a 1/4 cup at a time until liquid thickens slightly.
  6. Stir in broth and cook for about 5 minutes until heated through.
  7. Stir in cheese until melted.
  8. Reserve 1 1/2 cups broccoli and 1/2 cup carrots and add the remaining broccoli and carrots into soup.
  9. Carefully pour mixture in a blender and and pulse a few times until mixture is creamy or desired consistency.
  10. Pour mixture back into saucepan. Stir in reserved broccoli and carrots. Season with salt and pepper and bring to a simmer for about 5 minutes, stirring occasionally.
  11. Ladle into soup bowls and serve warm.
