Pumpkin Spice Streusel Muffins


  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup canned pure pumpkin
  • 1/2 cup vegetable oil
  • 2 large eggs
  • Streusel Topping
  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 3 tablespoons cold butter cut into small pieces


  1. Preheat oven to 375 degrees.
  2. Line a 12 cup muffin pan with liners and set aside.
  3. In a large bowl mix together flour, baking powder, pumpkin pie spice and salt.
  4. In a medium bowl whisk together sugar, pumpkin, vegetable oils and eggs until smooth.
  5. Whisk wet ingredients into dry until smooth and blended.
  6. Spoon batter evenly into each liner. Batter will almost be to the top of each liner.
  7. Mix together flour and sugar in a small bowl.
  8. Cut butter into mixture using a pasty knife or a fork until mixture is crumbly.
  9. Sprinkle topping generously over top of batter.
  10. Bake on center rack for 20-25 minutes until tester inserted into the center of muffins comes out clean.
  11. Cool on a wire rack.
