It’s only a few days into the new year and I’m already obsessed with something, this Mandarin Orange and Spinach Pasta Salad! Seriously it’s delish! I’ve made it dozens of times before but for some reason right now I can’t get enough of it! It’s super easy and totally customizable so it’s perfect for lunch of dinner. I love it as for meatless Monday but it’s great even with some chicken in it as well.

Kiddos even love it too! The sweet juicy mandarin oranges, the bowtie pasta and the tasty dressing makes makes this salad irresistible to any kid! And if you have picky kids that refuse to eat spinach you can substitute it with romaine lettuce or just chop up the spinach, tell them it’s lettuce and they’ll never (hopefully) know!

I started featuring my weekly meal plans and my meal planning strategies on The 29 Minute Mom which is a site I started last fall with the very talented organizer Jennifer Ford Berry. The 29 Minute Mom features podcasts, tips, organizing ideas to improve your home, health and spiritual life.
