Fudgy Flourless Black Bean Brownies

Ingredients

  • 15 ounce can black beans (rinsed and drained)
  • 1/2 cup quick oats
  • 2 tablespoons ground flaxseed
  • 2 tablespoons cacao powder
  • 1/2 teaspoon baking powder
  • Pinch of spirulina powder (optional)
  • 1/4 teaspoon fine pink himalayan salt
  • 1/2 cup pure maple syrup
  • 1/4 cup coconut oil
  • 2 teaspoons pure vanilla extract
  • 1/4 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray an 8-inch baking dish with cooking spray and set aside.
  3. Place all ingredients except chocolate chips in food processor and blend until nice and smooth.
  4. Add in 3 tablespoons chocolate chips and lightly pulse a few times more until chips are combined.
  5. Pour batter into prepared baking dish.
  6. Sprinkle remaining chocolate chips on top.
  7. Bake for 25-30 minutes until set.
  8. Cool on a cooling rack. Brownies will firm up more when cooling.
  9. Allow to cool for about 20 minutes before cutting into squares.

You can use a can of your favorite black beans. Make sure they are thoroughly rinsed and drained. Make sure they are drained well and maybe even pat them dry if they’re still really wet before transferring to food processor.
